A set of the older Ford Escort GT 15" alum wheels would fit?

Yes, but only on bumps at full lock, i.e. coming into traffic from a side-road parking lot. Under normal driving, there is no rubbing.
So for you, with your lowering, they likely would.
The issue is that these have an offset that puts the rim a little closer into the body than the stock steelies. I'm thinking about buying some Performance Wheel spacers. I like the way the rims look on my car, but I want to be able to run my 205/50R15's without ever rubbing.
BTW, they handled gravel pretty nice for bald lower-profiles.
