Re: Temp gauge
Check the connection to the temp sender on the front of the block. Sounds like you have a bad connection or a short, or maybe a bad sender?
For the defroster, mine isn't working either, try this thread for some tips, I'm still working on it:

Re: Temp gauge
Normal rpm is anywhere from 700 to 1000 rpm. I usually run mine around 900.
The link Paul mentioned is a good one. You can start by checking if you are getting 12 volts at the wire on the driver's side (I believe) to the grid on the hatch glass. If you are getting power there, it is the grid or the ground on the other side. No power, you need to work backwards, and most likely is a broken wire in the hinge area. It flexes as the door is used and may eventually break. Does everything else on the hatch work? Wiper, washer, reverse lights, plate lights?

Re: Temp gauge
if you have the owners manual in the glovebox, it mentions how to open and/or close the power sunroof if the motor has failed. if you don't have the owners manual, check the FSM here.
for the defogger, if you have 12 V at the window, take a close look at all the lines on the window. it's possible every one is broken...which would mean lots of irritating defogger line repair, whoopee. i took some pics of my defogger line repair a while back, here is the thread.

Re: Temp gauge
test your temp gauge by grounding the wire to the sender, it should make it go to full "hot", and than drop back down when it not grounded. sounds like a bad connection, usually that occurs right at the connector, just give the female side a slight squeeze with some pliers, check the swagged connection at the wire. The temp gauge sender is the one on the front of the head right next to the timing belt cover. if it is the sender, they are cheap and easy to replace. Usually very reliable, I have only seen one bad one after owning, fixing and test driving over 30 very old Tercel4wd. so a wrecking yard sender is a good bet if you suspect yours is bad.

Re: Temp gauge
I have "only" owned about 10 or 12 (two were parts cars, but I drove them both before that), the rest are estimat of all of the others, mostly forum members, that I have done work on, drove and generally help put back on the road.
I am down to "only" three right now.
